Concerning the coins in the 1979-S proof sets, are they all usually either Type I or Type II or has anyone ever found a mixture of both in a single set? Just curious because I recently found a set with all Type I coins EXCEPT the penny, it's clearly a Type II.

The set can be found with either type 1 or type 2 SBA.

I believe the type 2 SBA is scarcer though.

I'm not sure about the cent though.

type II SBA is the key in this..
I was lucky to find a nice complete type 1 set and a complete type II set.... if you get one, leave it in the OGP for good provenance.

The coins did not all switch over from the type 1 mmintmark to the type 2 at the same time so the sets can be found with all type 1, a mixture of type 1 and type 2 or all type 2. The dollar was the last coin to switch over from type 1 to type 2 so the full type 2 sets came late in the production making them the toughest ones to find and the type 2 dollar seldom comes in a mixed type set.
