I was thinking of posting this one on Feb 14th but I'm more curious if it's a Canadian gold sovereign.

I'm guessing May got herself a love token Christmas 1901. Any chance the art work is worth more then the original canvas.

Well, the earliest minted Canadian sovereign was in 1908, so some info here is wrong. Could be an Australian or British minted sovereign since they're all the same weight.
As for your question, to the right collector this could likely be worth more than the original coin since the engraving is so nice, unless of course the original coin was high MS or a key date (but I guess that's a moot point now).

I think any one of these things could help increase the value. IMO
A letter, note or story to go with it? Was this engraved for a family member? if not has anyone looked at it to prove it was engraved over a hundred years ago?
Any initials anywhere to be seen?
Either way its eye candy, and well done...nice.

Oops...
Just had a 1910 sovereign to compare, size and shape matched, figured I had it solved. Fail 😯
Thanks for the help.
