Can anyone recommend a source for Euro mint sets? Are there any? I haven't been able to find out what's available. I assume there would be sets available somewhere for each country individually (I don't want every single country variety, just a good example of one country, such as France, Spain, Belgium or Germany).

If you plan to get the euro circulation coins from just one country, Belgium may not be the best idea. There are eight denominations, and the Belgian ones all have the same obverse (country specific side). Here is a "diversity ranking":

Austria, Greece, Italy, Slovenia: 8 different designs
Cyprus, Finland, France, Germany, Luxembourg, Malta, Portugal, Spain: 3
Netherlands: 2
Belgium, Ireland: 1
(Monaco, San Marino and Vatican issue few coins, primarily for collectors.)

By the way, I found a great source ("official") for Euro mint sets in the U.S.: royal scandanavian mint, https://www.rsmint.com
