I'm able to get this coin for an EF 1910 British gold sovereign, VF Canada 1900 quarter and 60 dollars.
Should I just keep the gold sovereign I have now since gold is going up in value anyway or trade all this in and get the 5 dollar gold coin ?

Here's the coin

it seems like a good deal we know each other so he's offered the coin to me for 299 dollars.

well I've never used ebay, everytime I put my credit card on paypal they won't accept it for some reason so I was never able to buy stuff from ebay.
because of that I've relied on coin shows and this one store that's in my city to buy coins.

his ebay site doesn't do him justice, I go to his store and am able to negotiate almost every price down. he's also been nice enough to take coins back that I've gotten from him for the same price I paid (when I want to upgrade a coin or buy something else).
he does have a lot of interesting coins, and he's also careful not to overgrade. he grades Canadian coins better than everything else.

the coin is worth what it is marked. I am currently selling a MS-64 sovereign on ebay and it is at $200 with several days left. I'm not sure whether I would trade the sovereign and quarter + $60.00, or just buy it outright for $299. I think I would be more inclined just to buy it for $299. Your sovereign with the quarter and $60 is probably worth more than $299.
