Well I made a new stand using a top of a broken tripod, and some 1x1 angle iron with a solid steel plug that I cut out in a lathe. The setup has zero movement when looking down and hitting the shutter. The shots are true color with no enhancement in a 1 foot white photo cube with no open sides. I think I finally worked out how to get a good, true shot of a coin.

I will try to take photos of it with a different camera with the light set up. The new stand I made holds my camera very still and the 1 foot by 1 foot photo cube allows me to keep all other light and color hues in the room from effecting the real color.

That's important, as even a little reds or blues coming in will give your coins an off color. Then its a matter of F stop and Sutter speed as grey scale in your camera. I have reset my gray scale manually in using my photo cube, so the scale is true to the lighting.
