The magnification we talk about in macro photography is optical magnification. It is the ratio of the size of the image on the sensor to the actual size of the object. You can't directly use the size of the image on the screen to calculate the magnification because the size is arbitrary. A larger screen will have a larger image!
As rocky says, you can use a ruler to calculate magnification. In Live View, set the ruler horizontally where the coin goes and write down the visible length. Canon sensors are typically 23mm wide, so divide 23 by your measurement. This will be your magnification. As an example, if you measure 46mm, you are at 1:2 magnification.
