Potential grade? Value? and any other info I should know about the coin?

Looks to be in the low MS area or AU. It's off centre, but not so dramatic. My guess is something like $7

Grade is not as important as colour and the amount of offset and of course the year

John, is 81 a good year? would this example be above average for color? I know the off centre isn't very dramatic.

What would be the difference between my penny and this one...

The 1970 to 1990 are quite common, recent 2000 are rarer to find but the colour is red, around 50.00

Nice looking error!
A few 1981 have sold on ebay recently.
You paid $25, which is a fair value, not a bargain and not a ripoff.
One 1981 with a much more dramatic offset sold for $40.
The one you linked to on ebay is overpriced by a factor of about 7. It will never sell at that price, but if some unaware fool offers 50% thinking they are getting a deal the seller is way ahead. Caveat Emptor.
"Dipping" is not considered cleaning...
