Hi, I was coin roll hunting pennies and I thought I saw a 2008-S out of the corner of my eye but it actually turned out to be a 2008-D. It kinda looks like a D over an S though, and I'm wondering if this is a unique error or if it's just a Cud or something.

It's damage not an error or a Cud.

Damage. Cuds involve the rim. After 1990, mint marks were part of the hub, and not added to the die by hand, eliminating repunched mint marks and over mint marks.
