How about the 50th Anniversary of WWII dollar (1993)?

The Vietnam Veterans Memorial (1994) and POW Museum (1994) coins are nice as well as the USMC 230th Anniversary dollar (2005)

Digging a bit deeper in my Red Book, that Medal of Honor silver dollar (2011) is nice as well.

I'm really glad a few others have mentioned this one already. It is a favorite of mine, in fact I keep a specimen as a daily pocket piece. Iconic imagery for sure. I think this one matches your criteria perfectly!

It is a good looking coin.

There are certainly many coins which fit the bill. In the end I chose the Ike because we all know I like Ike.

Out of those last two I think I may actually be leaning more towards the Constitution one... I can't really explain it, but the SSB dollar looks too... "new" whereas the Constitution reminds me more of the classic commemorative dollars (which I love). Also a quick look up online shows the Constitution is a little cheaper than the SSB dollar, which is always a plus as well.

Mintages were HUGE on that one Mister Kairu!

I know many sell on ebay for under $20. I really think it is an underappreciated issue in the modern commemorative series. Glad you like it too.

Based on this, and speaking as a foreigner, I'd say the 2012 SSB or 1987 Constitution.

My personal favourite would be the 1987 Constitution - but it may not be as instantly recognisable as Old Glory, especially if someone doesn't read English.
