How about the 50th Anniversary of WWII dollar (1993)?  EDIT: Crap someone beat me too it :P The Vietnam Veterans Memorial (1994) and POW Museum (1994) coins are nice as well as the USMC 230th Anniversary dollar (2005)  Digging a bit deeper in my Red Book, that Medal of Honor silver dollar (2011) is nice as well.  Also the Korean War $1 (1991) is pretty nice as well.

 I'm really glad a few others have mentioned this one already. It is a favorite of mine, in fact I keep a specimen as a daily pocket piece. Iconic imagery for sure. I think this one matches your criteria perfectly!

It is a good looking coin.  There are certainly many coins which fit the bill. In the end I chose the Ike because we all know I like Ike.

Out of those last two I think I may actually be leaning more towards the Constitution one... I can't really explain it, but the SSB dollar looks too... "new" whereas the Constitution reminds me more of the classic commemorative dollars (which I love). Also a quick look up online shows the Constitution is a little cheaper than the SSB dollar, which is always a plus as well.

    Mintages were HUGE on that one Mister Kairu! I know many sell on ebay for under $20. I really think it is an underappreciated issue in the modern commemorative series. Glad you like it too.

My personal favourite would be the 1987 Constitution - but it may not be as instantly recognisable as Old Glory, especially if someone doesn't read English.
