I've never bought from
APMEX but, I think it's safe to say that what you've gotten from them is real.
As far as junk silver coins from
ebay, the easiest thing would be to buy a cheap digital scale and compare weight to what it's supposed to be if real (accounting a little for wear). You can get a scale from
ebay that does 1/100th gram for $20.
The next method would be a specific gravity test to determine the piece's composition. It's cheap and you can use the scale you bought from
ebay 
. It's more time consuming but the results add a lot more to just knowing the weight.
Beyond that, XRF can be used to determine the composition. This, in my opinion, should be the last resort.
