I have coins off at ANACS and the status report shows processing. Will they put on there what the coins grade or do I have to wait for them to finish all of them and wait for the mail?

When they have finished grading your order they will change the status to "shipping" ... and then "shipped". At that time there will be a link on the order status page where you can see the list of coins and the grades assigned.
