What would you do with these rolls/boxes? Open them or leave them sealed and try to resell or trade them in a few years? (I am a coin collector, not a re-seller)

And, if I open the rolls/boxes, considering all the date and time stamps are the same, will they all be the same? Meaning, all error if present, or all non-errors, no mixing of the two?

If it was me that had these, I would open them in hopes of error coins or varieties, but that's just my opinion. You can do anything you want with these.

All the time stamp means is when Boxed. The coins will be in hoppers until rolled. You may get some from pristine dies or some doubling it would all just depend on the when in the line of time were these boxed. As to all coins being the same in each box, not necessarily. What was in the hopper, how it got mixed and separated, all is chance. I would venture to say, there wouldn't be a vast amount of DIFFERENT DDR's. By experience, if you get a roll with doubling, or massive MD, or cracks it will be the same error. So, no different "fingers" either a lot of the same, or zip, nada of any. I would sell them now, market is big.
