The fields are mirror like, except where worn, unfortunately difficult to capture in a photo. Either way an opinion on grade and value please... I love this coin.

Welcome to CCF!  I am no expert on proof coins, but I don't think that one is up to that standard. At best it would be described as "impaired proof" as it has taken some wear and damage. A great many 1887 coins were released in sets without being proof, and these tend to have survived in excellent condition - I see quite a few of them here in the UK. I suspect you have one of those. It is a very lovely example though!

Business Strike , not a Proof. Double Florin Issue Of 1887 To 1890 is an interesting short series. Many of the 1887 Double Florin Coins have a somewhat Prooflike appearance and were Struck to a very high standard.

Not a proof, impaired or not; they are identified by having well struck up detail in the lions' faces.

 to the Forum! In Coincraft's Standard Catalogue of English and UK coins, Richard Lobel states that an easy way to tell the Proof and non-proof issues apart is by the milling on the edge. He says that the milling on Proof coins is so sharp it almost cuts your fingers!

Lions for review. Although having a degree of circulation the coin retains a mirror finish. This is off putting as it is unexpected to me in a non-proof coin.

Closer images of the Lions' faces make me think this perhaps it is indeed a proof. I would now like to think that it is, but it leaves the possibility that this coin may have been the product of fresh dies. NumisRob's comment from Lobel's book concerning sharp milling for proof coins is made in relation to other denominations, but I cannot see why it should not be relevant to the Double Florin as well.
