I found this 1991 P LMC with what appears to be three rims. I have seen many doubled rim cents but haven't ever come across one with three. I know it was struck ever so slightly off center. How did this happen?

Overpressure strike, that's call "rim finning". The strike forced too much metal to compress(note rear) causing the excess to squirt upwards along the collar.

Actually it is from a tilted die, that leaves a space between the die and the collar that creates a fin. Not the opposite side of the rim is not affected.

I don't think it is the fin that he is talking about. I think he is referring to the doubling of the INNER edge of the rim.

Note the fattening line? That area is where the fin took a hit and fin was bent over. That is why it looks like three rims. It is an illusion of the bent over rim area.
