To me a magic eye coin is any coin that when you look at it you can see something else besides the intended image on the coin.

I don't know if anyone else here has any but here are two of mine:

On the obverse of this coin I see a man standing wearing a pea coat in profile with his arm up in the air and whistling.

On the obverse of this coin I see the head/face of Frosty the Snow Man looking at me wearing a floppy hat.

I do see the snowman with hat in the second coin...what is it supposed to be? Pretty neat.

Interesting topic. I am not sure about the first coin, but I do see the hatted snowman head in the second.

It's supposed to be a Fertility Goddess. With Frostys' mouth being the stomach and the brim of the hat being the arms.

These aren't mine but they are some interesting ones. They are from the Illusion series of coins put out by Congo in 2001.
