I have got this interesting looking coin with VIII Pont inscribed but I don't know what year, denomination nor country (assuming Papal state coin?), any help greatly appreciated!

Yes, Papal States. A quattrino by Pope Clement VIII, minted 1600. Here is another example: https://www.acsearch.info/search.html?id=5892957

The doubling makes the letters a bit unclear, but that Roman numeral date of MDC is really neat!

I wonder if this type was supposed to commemorate the round date? IIRC the 17th century Papal States made loads of assorted brief coin types (though possibly less so in Bologna).

First, @cointosser, that's quite a nice coin for that era! I have a few Papal States minor coins of the 1600s, and they are mostly pretty beat (also, compare your coin to the one pictured in the Numista listing linked by @calzone).

Following up on @j1m's comment, 1600 was a Jubilee Year in the Catholic church, so yes that was a special date (one of many Christian traditions carried forward from Jewish antecedents). For history on this: https://www.britannica.com/topic/Year-of-Jubilee
