Having never collected these before I had no idea Cnd. 50cent coins in the earlier years are so difficult to find. I have a few years I'm looking for and want EF, with little success. Specifically 1900, 1910 and 1911. Are these actually rare, or just extremely popular?

Always at least a couple of each in EF on ebay. So they are by no means rare. It's simply a matter of how much you are willing to pay.
"Dipping" is not considered cleaning... -from PCGS website

Since very few people back then could afford to put aside such a valuable coin, ones in EF+ grade are scarce as well as popular. Therefore expensive.

I'm willing to pay what the market demands, but finding nice pieces that are graded (a must for me if spending north of $500) has proven to be very difficult. Even dealers seem unable to get these coins very often.

I would keep eyes on heritage and cnc auctions, they are likely yo have something for you from time to time. Not rare, but definitely on the harder side, especially problem free.

Go by coin and not by slab. In some cases 500 will be not enough.
