Having collected CWT's for over sixty years now, I don't put great stock in book values. Book values for coins in general tend to be 30% or there about above market value. Experience tells me that the market for tokens is generally less stable; this, given the unfamiliarity of most collectors with much scarcer token issues.
A good way to learn token values is to watch ebay and visit auction archives like those of Stacks and Heritage. Here's a comparable, unslabbed and yet-to-be-sold Sherwood & Hopson CWT with a $95 BIN price on ebay .... https://www.ebay.com/itm/325181253601
This is a fairly common token. A few months ago, I purchased a pair of common NY CWT's at a show. They were NGC graded at MS-63. The price was $145 for the pair .... no tax and no shipping, of course. IMHO. a fair market value for the common, slabbed Utica CWT would be in the $75-$90 range. If a higher value is one's goal, consult the book.
