I saw a few that looked like they had been chemically stripped that were being looked at and discussed. Well what is your opinion about this one? And it weighs 2.51 g

Looks like Enviromental damage to me, not a missing copper plate.

I understand that but there is literally no damage to the die. It's still sharp and in great condition. Wouldn't environmental damage hurt the die itself?

Environmental damage wouldn't necessarily harm the coin, depending on what it was exposed to.
If the plating on your cent was missing, it would have a dull grey colour showing the exposed zinc.
On yours you can see traces of copper.

to the CCF I think you are mixing your terms. Enviornmental damage is on the coin, not the die. The die is the tool at the mint that makes the coin. This coin is slowly disintegrating, next will come zinc rot.

As mentioned, not missing copper layer. Environmental toning/staining. Post mint damage. No error, it didn't leave the mint looking this way.
