Is this the same style of mint-mark or were there 2 different kinds of D's for the 1968D LMC?

The mint mark looks bigger on coin #1 than #2.

Any 68 D's that I've seen are always like the second coin- Very thick.

Look at all those die polishing marks around the date/mm on the first coin.
Would that suggest what happened to the relief/thickness of the mint mark?

It is possible that the D was lightly punched into the die, leaving a shallower impression and thus a thinner D.

It is an issue with the polishing of the die. It defaced the die making the mintmark weaker.
