I am glad you finally formulated a procedure to capture the photos of your coins.

Do you think it is important to get a picture of the whole lens plus coins when taking pictures of Proof Sets?
For my OGP sets, I like to have one shot of the whole set, which does not have to be the best; and then better shots of the individual coins.

I left the single coins in their air-tites because I can't get most of the air-tites open, is there a trick or technique? I would prefer to take the coins out of the holders.
A butter knife or some other dull instrument along the seam usually helps. If not, you may want to
carefully use a utility knife. Whatever you use, I would perform the task over a clean white cloth and a soft surface in case you accidentally drop the coin.

...is Google Photos OK?
It is what I default to as a backup with my Android phone, but be aware that Google may reduce the quality to save on storage space unless you pay for premium. I copy the original full quality photos to my laptop, which is backed-up using multiple methods.

I can't post Google links to my pictures in the forum.
When you share them on CCF, it is always best to upload them here. When I create my image files (cropping, side-by-side, etc), I save two copies. Once is full size, less compression for own personal uses. A second that is smaller, usually 1500 pixels wide max (for side-by-side; 800 pixels for a single side) and data compressed to be below 300KB. I use
Paint.NET for all my work, but you can accomplish the same with
Irfanview.
