Exactly How Does A Coin With One Date Or Mint Mark Get Re Struck With A Different Date Or Mint Mark?

Since I only collect Morgan and Peace dollars, I don't know if this happens to other coins, but I know there are a number of years and or mint marks on Morgans where a CC might have been struck over a D or and 8 over a 7. But these also involve changes in the design. In early 18th century France, the coinage standards were constantly changing. The old types were collected and struck over with the new types. In other places and times this happened because it was more economical to do so. But I don't think that's what you are talking about.
