I have an unopened roll of each from 1999 from the mint. Should I open them to search for variations or does that impact collectability? I understand some may be of value.

They were minted in such large quantities that nobody is going to pay much of a premium for a roll of either. Opening the rolls will not affect the value one way or the other.

The chance of finding a valuable variation in just two rolls is practically zero.

Delaware P mint bank wrapped rolls were bringing $40-50 each on ebay,
shortly after they first appeared. I imagine the bloom is off that rose by now.
Anyone with a couple extra D rolls to swap, send me a message.
