After some searching I found a possible reference but I would be great to have a second opinion from someone more experienced

What's the reference you have? Does it have intro chapters to help you read the coin?

Chapter 17 of Plant's "Arabic Coins and How to Read Them" covers Ayyubid coinage & legends. This is a must-have for anyone interested in Islamic/Arabic coins.

I don't know of any Ayyubid-specific references offhand, but I imagine they're covered in one of Mitchiner's general Islamic references, which would help you identify more specific references.
