Both look like very sweet AUs to me.

The 1927 looks like a 55 and the 1931 a 53.

For my education please, what do you see that keeps this(1931)coin from grading MS62?

Both coins exhibit EF 45 qualities the wear on the obverse is obvious.

On the obverse, I look at the upper cheek just behind the eye and also the hair above the ear. On the reverse the upper wheat tips.

EF45 would be a conservative grade for these pieces as Metalman noted.

I could see these at AU50 or even 53 with a more liberal grader.

I am a notoriously conservative grader so you would expect this, but I agree with Metalman. I am seeing to much rub on the obverses to give them AU. Still, very nice coins!
