I keep indeed off-center coins, overstruck, overdates, die axis rotation (90 degrees and more) and clipped planchets.
Die chips and die breaks I don't keep 99,9% of the time..

The humidity where I living and the place where my collection is stored is ok.. I don't use 2x2 coin flips.. (i started collecting when the Euro coinage began, for example the coins are still as red as they are, without spots..)
Another reason is "space".. I put a serious amount more coins on 1 page then when using flips.. I use pvc free sheets.. Looks like this...
