I actually like the 1972 dollar, the last voyageur silver dollar (I think the 2003 strikes are commemoratives). Nice toning on your 1972. I assume this collection mainly focuses on the 'traditional size' silver dollars, and does not include the silver composition Loon dollars?

But no dollar collection will ever be complete, because the Royal Canadian Mint, in its own asinine way, has recently minted three dollar coins (two in 2003 and one in 2009) struck in gold, mintage of 1. Not even the National Currency Collection will have one in its collection.

I think many of us grew up knowing that (1911).

With respect to the 1911 dollar, you are referring to a pattern strike (it is recognized as such), not an actual mintage figure.

What would you call several one off gold strikes?

Commemorative coins (non-circulating legal tender), mintage of 1.
