There are quite a few, some that were put out by foreign Mints, I made a list that I think has them all. The ones not by the U.S. Mint are noted on the right. If anyone knows if I'm missing any, please share.

No no, not at all, a topic near and dear to my heart.
I think you have them all, all that I know about. The Perth Mint colorized was one I didn't know about until I think earlier this year, found out through Commems articles.
I do have all the sets on the list, the full sets.
The 2004 Legacies of Freedom, sort of a collaboration. I'd have to recheck it, but I think both the USM and RM sold it. So maybe has to be listed as USM/RM. Kind of an oddity in regards to even what year it was issued.
So there's that. I may need to edit this post a bit after I go back to your post.
Another kind of an oddity that needs more research.
That 2000 "Diamond Millennium" (or to that effect) paperweight. Here is what I wrote on my list:

"I'll include this in the list. I have made some attempts to verify if it was issued by the US Mint or not. The outer box
does have the US Treasury Seal, but I'm not sure if this is any positive evidence that it is really a US Mint item. I
have never seen a COA for any that I have seen online. I have heard stories that it was given out as gifts to
Authorized Purchasers and similar stories to that. The US Mint was selling Lucite paperweights similar to this in
this timeframe. I have seen a 2000 Sacagawea Lucite Globe paperweight with a box that looks like the same box as
I've seen with these diamond paperweights, so that could be the source of the box. Any other data such as price or
production numbers are unknown."

I think both Mints had a surplus and this was a way to sell them.
