If people keep deciding to buy items and make them sell out, then there is no reason for them to continue or stop.
It is up to the individual to stop purchasing if they are overwhelmed by the releases. If they don't sell out then you can pick them up when you are ready to purchase them.
Think of the reverse scenario.
If they toned down the release, people buy them out immediately because they have the money and want the items and them end up struggling to find the coins and paying more from the aftermarket, which you all do not want or like as evidenced by some coins (Canopy/Mask/Butterfly)
So what is worse - fighting over coins that will likely be short supplied or waiting to jump in for things that will not sell out and can be bought at issue even at a later time.
The control is always in the hands of the consumer/customer with their wallets. Stop opening them, and they can tone it down. If the coin itself is beautiful and you want it - then go for it, if you don't have the money to keep it up then don't buy it.
Silly thing to be disappointed with.
