"Coins struck using specially prepared Dies and planchets, under controlled conditions. Struck 2 or more times under higher pressure.! Limited quantities produced each year and can range from $200 to a million depending on mintages.
Generally beyond the hobbyist collector.! Check P.C.G.S. for some wonderful examples.

I assume your question is, "How can I tell the difference between a proof penny and a non-proof penny?". And I didn't answer your question because I can't always tell the difference between proof and super-high-grade non-proof predecimals, just by looking at them. PCGS have had trouble, too, because they've slabbed high-grade non-proofs as proofs before. A blown-up picture, sure, I could probably guess the difference, but otherwise, no. So I'm content to let the other collectors, who can tell the difference by eye, collect them.

Um, what? Sorry, but I've never heard of "three different kinds of proofs" before.

It depends on the coin, different year proofs have different finishes, e.g. proof pennies struck at the Perth Mint from 1955-57 have a mirror finish while those struck from 1958 - 64 have smooth, brilliant surfaces with a matte relief.

Rims on post-55 proofs (particularly the Perths) are often more square and more thick compared to currency issues. Easiest way to learn is to look at enough of them. The differences on post-55 copper proofs are obvious, but, as Sap said, other proofs are difficult to distinguish from the currency issue coins.
