2005 and 2007 reverse cents. what causes these "blobs"?

that happens when the edge of the letter or number breaks off. some call it a die crack but it is a break not a crack

"Die chip" is what I've heard them called.

The term 'die break' is usually reserved for much more obvious die chips. They are the same thing, but so are hills and mountains.
