I have a 1953 Canadian nickel, but can not tell if it is a sholder fold or not.

Hi there. Your '53 is a SF near. That particular year has a few varieties.

You coin is the 53 SF (Shoulder Fold) Near leaf.

Here is a good reference for determining if it is SF or NSF. Look at the "I" in "DEI" on the Obverse:

Nothing really. It's chrome-plated steel. Nickel was taken out during the Korean War.
