Why are so many loonies different in color than others?

The older loonies are Bronze plated Nickel.
In 2012 they switched to Brass plated steel.
They oxidize different colours.

This is due to environmental wear. also the newer ones seem to have a different finish to them (might be a different mix of metals)?

yes environmental wear, circulation wear, different plating, and different alloys.
