Got this quarter back in change from gas station few days ago and I immediately realized how good of condition it was in but otherwise looks like any other new quarter. Today I noticed it doesn't have a copper layer showing on the edge of coin. Can someone explain why?

It has been plated with either platinum or silver.

I'm sure I could Google this but would rather you explain what the purpose is of plating? Is it something to make it more special like in proof sets? Just wandering why it was in regular curculation

They sold them on HSN to the rubes. When they realized they were not a collectible, they spent it.
And they are still selling them online.

I really don't know why they plate them in silver,platinum and gold. They sell these sets on tv to grandparents to give to their grandchildren. Later when the buyers or receivers realize they are only worth face value they spend them,that's how they end up in circulation.

levelsofmadnes it weighs 5.7g. If it was plated shouldn't it weigh more?

The weight of the plating is very small and the mint tolerance needs to be factored in.
