The following are complete (well according to my original definition)
Canada Large Cents (1858 to 1920)
Canada Small Cents (1920 to 2012)
US Small Cents (1857 to 2019)
Mercury dimes (1916 to 1945)
Peace dollars (1921-1935)
Walking Liberty half dollars (1916-1947)
Bison Nickels (1913-1938)
Liberty V nickels (1883 to 1912)
20th Century Type Set

In New Zealand things are much easier!

Sans minor and hard varieties - date sets
Halfpennies 1940 - 1965 complete
Pennies 1940 -1965 complete
Threepences 1933 - 1965 - Just need the rare 1935
Sixpences 1933 - 1965 - Complete and also 1965 Broken wing
Shillings 1933 - 1965 - complete including 1942 and 1965 Broken back
Halfcrowns 1933 - 1965 - Complete and 90% upgraded to VF or better.

British coins by reign

Farthings - All George VI (1937 - 1952)
Halfpence - Complete 1927 - 1967 (1970 coin was a set proof only)
Pennies - Complete date set from 1886 except rare 1933 coin
Threepences - All the brass ones from 1937 to 1967 except 1946 and 1949
Sixpences - All from 1935 to 1967, except the scarce 1952

Not quite a run of Morgans, mint Sitters or Cameo ikes, but a start.

Every standard US proof coin 1982 - 1990 (Penny to Half)
Loving Halfcrowns. British and Commonwealth coins 1750 - 1950 and anything Kiwi.
If it's round, shiny and silvery I will love it.

Despite having a pretty large collection, the only full sets I've completed are V nickels, silver Washington quarters (1932-1964), 1938-2002 Jefferson nickels, Susan B. Anthony dollars, and Walking Liberty half dollars.

For the "almost" albums, Indian Head cents is almost complete (missing 1909-S) and same for Mercury dimes (missing 1916-D of course) and Lincoln wheat cents (no 1909-S VDB or 1914-D.)

Nothing else really close except maybe Canada Large Cents (need 9 coins including varieties, or 6 for a date set) and US Large Cents (not likely to happen any time soon, I need both 1793's, 1799, and 1804, in other words, another $5000-$9000 or more for just those 4 coins.)

I completed a portrait set of English / British shillings Charles 11 to Elizabeth 11 some years ago.
Minimum grade Fine (British grading) This set now with my son.
He has completed a type set of British copper and bronze Pennies - all monarchs.

I have also completed an Australian gold type set of Sovereigns and half Sovereigns, (17 coins in all), including an Adelaide Pound. This set sold at auction a long time ago.

I don't know if you an call it a set?, but I have built a collection of all of the major denominations of Greek and Roman coins - nowhere near complete, and very unlikely to ever be so.
It does include at least one representative coin from all of the major ancient cultures: Greek, Roman, Roman Colonial, Celtic, Bosporus, Byzantine, Chinese, Islamic, Indian, Parthian, Sassanian and most of the related sub cultures.

Newfoundland: 1873, 1888
Province of Canada: 1858-9
Canada: 1902, 1903
India: rupees, half-rupees 19th c.

The rest of the collection is pretty scattershot - hoping to complete the Newfoundland 5c, 20c and 50c in the next two years.

For British coins, I've got a complete collection of all denominations issued for circulation from third-farthing to halfcrown from Edward VII to Elizabeth II (1902 - 1970). I don't have all the gold coins or the George V Wreath crowns, the super-rare coins like the 1933 penny or coins only issued in Proof Sets like the 1927 threepence.

I have a full date and mintmark set of Victorian bronze pennies from 1860 - 1901, including most of the major varieties, but none of the really rare ones like the 1862 with a die number or the 1882 no H.

For the USA, I've completed a set of P and D State Quarters thanks to trading with CCF members.

I have a date set of Morgan dollars with a mixture of mintmarks and in a variety of conditions! I only have one example of each coin from 1878 to 1904 plus all three 1921 coins. My Morgan collection includes specimens from all four mints.
