I have tried researching this coin with not much luck. It is starting to get some toning to it and it does weigh out at 2 troy oz. Any help on who minted etc...

This is a privately minted silver bullion piece. It is not a coin.

These are sometimes hallmarked on the rim.

Right under in god we trust there is a stamp, nAm that is in a circle. I do not see anything on the rim.

So is this piece just worth it's weight in bullion or does it have any collector appeal?

Its worth its weight in silver with a small premium. If you were to sell it today on ebay (which I would advise against because the price of silver has fallen dramatically to ~ $27/oz) I would expect it to fetch about $58 - $60 or so.
