Tell him to throw all the coins in a box and sell it on ebay as an "unsearched box of coins."

What you really meant is throw him in a box into the bay and don't search for him.

I did consider that, but as you point out it's unlikely.

My main concerns are that customers without any knowledge will be cheated & knowledgeable customers will take one look at the display case & leave the building. Nothing I can do about either of those things so I might as well let things lie.

Hmmm, this is a very complex problem and it needs a creative solution ...

I've GOT IT! => If the dude approaches you and asks for your opinion, then merely keep your mouth shut and pretend to "walk against the wind", or try the ol' classic "peeling a banana" ...

=> everybody knows that people hate mimes, so he will definitely keep his distance from your booth (problem solved)
