I've heard somewhere that with some coins having them as pocket pieces for a while could bring out some details.
Is that true, and if so, which coins (and which types of wear/damage/whatever) does this work for?

I have an uncirculated silver pocket piece in an acrylic screw capsule.

I think you probably misunderstood a little bit because you will never ever be able to get better details by carrying it around because that just wears the details down more, but if one is cleaned or has some other problems wrong with it you can carry it around and get the problems worn away where it will grade problem free but at a lower grade than it was when you started carrying it because you are wearing away the metal down to get those problems on the coin worn away which in turn will remove metal from the detail of the coin as well

If you clean a coin and want to re-tone it back to looking somewhat right, carry it around in your pocket for awhile. Check to see how its re-toning. You can either carry it alone or with other coins. Alone there should be no noticeable wear over a few days. With other coins, maybe a little but nothing of consequence. I do not suggest doing this process with coins above EF.
