I am wondering if it makes sense to remove coins from mint sets that are uncirculated coins and grade them separately in hopes of getting more value e.g MS65 types?

It depends on the coins in the set, but yes you usually will get more parting out the sets than selling as a whole. A lot of the high grade coins you see from older years probably did come from the mint sets imo

Breaking sets to find coins that will have more value than the set as a whole.. can be done.

But it does have to be the right set .. and the coin in question should be sent into a top TPG service.

Plus you should be able to grade for yourself that the coin will grade into the higher grades, MS66 / MS 67 or better. Many times if a coin being sent in does not get into these higher grades then you would not recover the price of sending the coin in.

Of course once you do have a coin come back into the higher grades, you must have a outlet to sell high grade coins. Selling coins for a profit is much harder then buying coins.

With only a few exceptions coins from Canadian sets will not be MS.
They will be PR,SP,PL,MSNBUorUNC.
MS65s as a rule will not come from sets.
"Dipping" is not considered cleaning...
