Hi,

I am looking to receive the grade and applicable variety for this large cent.

Also please confirm that my assumption that this is a Large 7 is accurate.

Yep that's the large 7/6 S-273. 1 is pointed, on the 272 the 1 is blunt and the body of the 1 is closer to the curl.

What a great specimen. Is it written anywhere what percentage of 1807s were done this way?

Nothing really official, but if you use the current rarity estimates and the maximum estimated number of specimens for each level it works out to about 26% of the mintage of 1807 were S-273 or about 189,000 pieces originally.
