Trying to wrap my head around grading these coins, so hoping to get some input on these to gauge myself. Please refer to them by year or A B C, I know 3 at once isn't standard but I didn't want to spam :) thanks!

Shale,
I like the 1911 - nice color and minimum marks - a 'no-question' very good.
By contrast, the 1902 is an ordinary very good 'with problems.'
The reverse dentils suggest a VG but the rough wear and bumps detract.
The 1909 is a VF++ with MAJOR distracting problems.

Aesthetically I would take the 1911 without a second thought.
It would also serve as a guide to further study other halves which might be either good or fine.

Note: I tend to under grade since by modern 'market' standards.

Can one of these be graded F12 or F15 if it has rim dings? How severe of a ding does it need to be to render it damaged or affect the grade?

3. VF maybe VF details cleaned? A little white for a silver coin with wear.

Huh, I did not look at the consensus when posting my opinion but looks I matched the consensus. Sometimes I do not.

I had to read about this too. It appears it depends on the size of the ding and the size of the coin. I ding on a Morgan is very distracting but on a dime or 3 cent silver, not so much.

The only coin amongst the three IMHO worthy of a grading discussion is your 1911-S example.

It is the only original surfaces un-damaged coin (based on your photographs) ... likely grades VG10 or so.

The other two Barber examples are damaged/cleaned and worth the value of their silver content ... do not qualify for a 'grade' and are not generally considered coins that a serious collector would consider for their set.
