Yesterday I bought 2 Morgan dollars that were advertised as "DMPL" coins. They are the 1880 S and 1882 S coins. I know that these are the two dates and mints most common in DMPL but my question is this: How do business strike coins become DMPL? One of the first coins minted with a new die? Extra pressure was applied for whatever reason? I bought a coin that was polished (didn't pay a whole lot as DMPL's go and intend to send them both to PCGS).
You have it right. The first few coins from a new die should be DMPL, progressing through PL in use and into nice lustrous stuff. Further, dies were polished during their working life and if that midstream job was good enough the renewed die would be capable of striking a few DMPL's.
