The first two are clipped planchet errors. I would also say the last one is but I'm not 100% sure of it because its not a very half mooned shaped clip. You usually find them with half moon shaped clips or straight clips (rarer). The reason I judge the first to two be real clipped planchet errors is because if you look at the rim you can see the rim fading out two wards the clipped part. If it was man made you wouldn't expect to see that. Some also display what is called a "Blakesley effect". Where the rim on the opposite side of the clip is faded. here's one of mine with Blakesley effect:

Why do people like error coins like this so much, are they worth any more or just rarer?

Nice clipped errors. Here is a pre-decimal one that I have.

Both. It depends on the type of coin, the date of the coin the type of error etc. Errors are rare and should not have past through the mint into circulation. They used to be shunned by many collectors but nowadays they are very collectable. There are some coin collectors who only collect errors.
