Should I flatten it with wood? If not why not?

Should I soak it in olive oil? Why or why not?

You could put it between two pieces of rubber in a vice and do it that way slowly and carefully. It looks like it might have some cracks, I would leave it as is.

A soak in olive oil never hurts. I'm on the fence as to whether you should soak it. While the soak will not do much good for the coin itself it may increase the aesthetic appeal. Olive oil tends to darken coins over time, something which this one needs as it appears to have been overcleaned at some point. I leave it up to your judgement.
