Regardless of what you choose to use for storage, I don't think you should quit using the plastic bags because your best defense against humidity is probably layers and layers.
I am also wondering about the re-usable desiccant. Nothing lasts forever and it may need to be replaced some day. Also, the plastic bags may have developed tiny perforations and those may need replacing as well. Just a thought ....
I kind of struggle with the whole storage problem, too. I want to keep my coins safe from the elements but I would also like to just pull a notebook off a shelf and sit and look at them.
