I have searched a few straps of Singles and Fives to get the experience of serial number searching and came across 2 star notes (Ok Condition).

Are all these notes worth keeping if in great condition?

Thanks

To each their own. I only keep them if there are a low run and/or in crisp condition. Just because they are a star note doesn't make them collectible.

I keep ALL star notes regardless of run or condition... I just put them back as a emergency cash fund in case I need it...
