What is the best way to capture all the toning on a coin? Additionally what is the best way to achieve this when the coin in encapsulated?

What metal?
That has a BIG effect on what your camera setup is.

Silver, uncirculated not proof... I just need to know lighting and technique, I have a setup that covers everything (lens wise)
