Questions About Canadian Coins (Dates To Save/Varieties)

I've never gone out of my way to save Canadian coins, but after seeing a few things here and there on them..... I fear this is a mistake on my part and I admit my ignorance.
I don't have a book on foreign coins, much less Canadian, but i'd like some tips and advice on what to look for.
What are the key dates in pennies, nickles, etc. etc. to look for ?
And on varieties, are they easy to spot ? What years there ?
I would think that they would be hard to find IN CANADA ! LET ALONE HERE IN THE U.S. THOUGH !!
But, so, should I be saving EVERY Canadian cent, nickel, or coin that comes my way ? Do others do this ?

Yet, sometimes you'll find key coins when nobody is looking for them. I have found quite a few here in California.

Regarding references for keys and die varieties, I'd recommend the Charlton Catalogue or Charest's book "Canadian coins and their varieties".
