I'm looking for a book that focuses on what to look for on each coin to see whether it's counterfeit or not. It would also be cool if it had information about doctored coins and how to find them.

What you are describing in general, if such a guide even exists, would be a strenuous undertaking to create.. If it only covered each type of U.S. coin that's been counterfeit, and the different methods used to alter them, it would surely fill several volumes.

PCGS has a great series of very edecational YouTube videos about Counterfeit Detection, each video covers a different type of counterfeiting technique and the types of coins commonly counterfeited. Even they admit this study is a lifelong endeavor.

Besides I honestly don't think the industry would appreciate having a guide book published that could potentially be used by counterfeiters to improve their skills.

My suggestion would be to do the following.
1 study the PCGS video's
2 study this forums threads on counterfeit coins.
3 study the specific coins you are interested in buying. There are guide books written on most U.S. coin varieties.

Assuming that you are mostly looking at U.S. coins here are a few books:
PCGS Official Guide to Coin Grading and Counterfeit Detection by Dannreuther
Detecting Counterfeit and Altered U.S. Coins by J.P. Martin ( ANA correspondence course)
Counterfeit Detection: A Reprint from the Numismatist VolumeII
United States Gold Counterfeit Detection Guide by Fivaz
Counterfeit Mis-struck and Unofficial U.S. Coins by Taxay
Numismatic Forgery by Larson
Standard Catalog of United Statees Altered and Counterfeit Coins by Durst
Bill Fivaz's Counterfeit Detection Guide

The TPG websites often have have articles and other material on detection. The Numismatist typically has an article on counterfeits.

Importantly, look at a lot of coins. Go to coin shows and auction previews. Books will take you so far, the rest will come from actual experience and getting to know what a genuine coin looks like. The world's fair of money will be returning to Philadelphia in 2018 and often times there are lectures and courses on this subject. The ANA offers week long classes during the summer on a host of numismatic topics including Counterfeit Detection.
