I'm a counterstamper here, and it's mainly due to the following:
1. To see if I get my own coins back
2. Keeping track of what I stamp on a spreadsheet tells me what's out there as far as what I could expect in my searches
3. To see if anyone here reports one of my coins.
I can't speak for the guy who stamped your cent. I'm guessing that he might be merchant (some merchants did that in the 1800s) or it might be due to my reasons.
I could add a fourth reason......when I have available time, which is not always the case. As that I have other interests, I don't stamp all the coins I come across, but I do hit nearly all of the clad half dollars I get (except NIFC and bicentennial issues).
